FUNNEL CAKES 
2 eggs
2 2/3 c. all purpose flour
1 tsp. baking powder
Oil for frying
1 1/3 c. milk
4 tbsp. sugar
1/2 tsp. salt
2 tsp. baking soda
Powdered sugar

Preheat oil to 375 degrees. Beat eggs, add milk. Sift flour, sugar, salt, baking powder and soda together. Stir in the eggs, milk and beat until smooth. Holding a finger over the bottom of the funnel, move funnel over hot fat and as you remove the finger stop, swirl the funnel in circles. Stop the batter by plugging the end of the funnel with your finger. A 6 inch circle is standard. Fry cake until golden brown, turning once. Refill funnel and repeat until all batter is used.

Serve the funnel cakes sprinkled with powdered sugar or with syrup.
