FUNNEL CAKES 
2 eggs
2 c. plain flour
1/2 tsp. salt
1 1/2 c. milk
1 tsp. baking powder
Powdered sugar

Beat eggs and add milk, flour, baking powder, and salt. Pour through a funnel into at least 2 inches of hot oil, moving in a circular motion and then crisscrossing until you have made a cake of desired size. These cook quickly so watch them carefully. Remove from oil when light brown and drain. Sprinkle with powdered sugar. A large "fry daddy" works well for these. These are delicious if eaten while they are warm.
