FUNNEL CAKES 
For 4 (8 inch) cakes (can be doubled or tripled)

2 eggs, beaten
1 1/2 c. milk
2 c. sifted flour
1 tsp. baking powder
1 tsp. salt
2 c. oil
8 inch skillet

Beat eggs and milk together. Mix dry ingredients together and add gradually to egg, milk mixture and beat until all lumps are removed and batter is smooth.

In 8 inch skillet, heat 2 cups oil to 360 degrees. Pour 1/2 cup batter into funnel holding finger over hole. Fold over hot oil and release finger and swirl batter into oil starting at outer edge. Fry until golden brown. Turn and brown on other side. Drain on paper towels. Dust with 10x sugar. I add cinnamon.
