CHICKEN MANICOTTI WITH CHIVES
AND CREAM SAUCE
 
12 manicotti shells
1 (8 oz.) container soft style cream cheese with chives and onions
1/4 c. Parmesan cheese
2/3 c. (or less) milk
2 c. diced, cooked chicken
1 (10 oz.) pkg. frozen chopped broccoli (thawed and drained)
1/2 jar roasted red peppers
1/4 tsp. black pepper
Paprika

1. Cook shells approximately 18 minutes until tender but firm. Rinse in cold water and drain.

2. Sauce: Stir cream cheese over medium/low heat until melted. Slowly add milk. Stir in Parmesan cheese.

3. For filling: Stir together 3/4 cup sauce, chicken, red peppers, broccoli and black pepper. Spoon into shells. Arrange in 13x9 pan and top with remaining sauce. Sprinkle with paprika. Cover and bake 25-30 minutes at 350 degrees. 6 servings, 18 grams fat, 351 calories.
