MEAT GRAVY - LOW CHOLESTEROL 
1 c. clear meat broth (or defatted meat essence from roasting pan)
Salt & pepper to taste
1/4 c. skim milk
2 tbsp. flour

Combine flour and skim milk, beating until smooth or shake the mixture in a tightly capped jar. Gradually add to the broth or essence in a saucepan.

Cook over medium heat, stirring constantly until thick. Add seasoning; reduce heat and continue to cook, stirring, 5 minutes longer.
