QUICK CASSEROLE | |
2 lb. ground beef 1 lg. onion, chopped 1 tbsp. chili powder 2 tsp. salt 1/4 tsp. pepper 1 (12 oz.) can whole kernel corn (drained) 2 (8 oz.) cans tomato sauce 1 c. milk 1/2 c. corn meal 1 c. grated Cheddar cheese Brown beef; add onion and cook until meat loses red color. Add seasonings, corn, sauce and milk. Simmer 20 minutes. Season further if you like. Gradually stir corn meal into meat mixture. Pour into 3 quart casserole and top with cheese. Bake at 325 degrees for 40 minutes. Make in morning -- make twice as much -- let it wait -- reheat -- nothing bothers this dish. Serves 6-8. |
