CAJUN CORN 
1 medium onion, finely chopped
1 stick butter (1/4 lb.)
3 cans fiesta corn, drained*
1 can mild Ro-Tel
salt to taste

Cook onions in melted butter until tender. Add Ro-Tel. Simmer for 7 minutes. Add corn. Cook on low for 12 minutes. Add salt to taste. *This is the corn with red and green sweet peppers.
