SALMON SERENDIPITY 
1 (10 oz.) pkg. frozen broccoli
2 c. cooked long grain rice
1/4 c. chopped green pepper
1/2 c. chopped onion
1 (15 1/2 oz.) can red salmon, reserve liquid
1 can of cream of mushroom soup
1 tbsp. lemon juice
1/2 tsp. salt

Prepare broccoli according to package directions. Layer in bottom of 9"x9" baking dish. Saute onion and green pepper and combine with cooked rice. Layer half of mixture over broccoli. Remove skin and bones from salmon. Flake and layer half of salmon over rice mixture. Combine soup, reserved salmon liquid, lemon juice and salt. Pour half of soup mixture over salmon. Repeat rice, salmon and soup layers. Bake at 350 degrees for 40 minutes or microwave 8 to 10 minutes, rotating dish every 2 minutes. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
