MICROWAVE - CHICKEN STEW WITH
DUMPLINGS
 
2 1/2 - 3 lb. chicken, cut into serving pieces
1 tbsp. dried parsley flakes
1 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper
1 (10 3/4 oz.) can condensed cream of chicken soup
2/3 c. milk or half and half
2 c. buttermilk baking mix
2/3 c. milk

1. Arrange chicken in a 10 inch round baking dish, with meatier, thicker portions toward the outside of the dish. Sprinkle with parsley flakes, paprika, salt and pepper. Cover with wax paper. Microwave at Time Cook (power level 10) for 18 minutes, turning the chicken after 8 minutes cooking time. Drain off juices.

2. Combine soup and milk. Pour over chicken. Cover and microwave at Time Cook (power level 10) for 6 minutes, stirring once.

3. Mix baking mix and milk together in a small bowl to form a soft dough. Drop dumplings all around the edge of the dish. Microwave, uncovered, at Time Cook (power level 10) for 8 to 9 minutes, or until dumplings are risen and light. Makes 4 to 5 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
