CARNIVAL PIE 
2 lbs. ricotta cheese
4 eggs
1/2 c. grated Parmesan cheese
1/2 lb. Mozzarella, diced
1/4 c. sugar (opt.)
1/4 c. chopped Italian (flat) parsley
1/4 c. chopped prosciutto or Westphalian ham
3/4 lb. sweet Italian sausage pepper

Preheat oven to 400 degrees. Remove sausage from casing. Brown in saucepan, removing as much fat as possible. Mix ricotta and eggs until smooth. Add remaining ingredients and mix well. Line 10 inch pie plate with favorite pie crust. Pour in mixture. Cover with remaining half of pie crust. Cut slits in upper crust. Bake at 400 degrees for 15 minutes. Reduce heat to 325 degrees and bake 40 to 50 minutes longer or until firm in the center. Can be served hot or cold.
