1 env. Lipton onion recipe soup mix
2 lb. (6 to 8) potatoes, cut into 1-inch cubes, unpeeled
1/3 c. olive oil or vegetable oil

In large plastic bag, add all ingredients, shake until potatoes are evenly coated, empty potatoes into shallow baking or roasting pan. Discard bag. Cover until tender, bake open last 20 minutes. May be garnished with parsley. Bake at 450 degrees.
