COOL CUCUMBER SLICES | |
1/2 c. fresh mint vinegar 1 tbsp. minced fresh mint 2 tsp. sugar 1/4 tsp. salt 1/4 tsp. white pepper 2 med. cucumbers, about 1 pound, peeled & thinly sliced Combine first 5 ingredients, mixing well. Pour over cucumbers in a medium bowl, tossing gently. Cover and set aside 1 hour, stirring occasionally. Serve with a slotted spoon. Yield: 6 servings (about 21 calories per 1/2 cup serving).
