VEGETABLE PUDDING 
1 c. ground carrots (about 3 lg.)
1 c. peeled ground potatoes
1 c. peeled ground apples
Dash of nutmeg
1 c. sugar
1 c. flour
1 tsp. salt
1 tsp. baking powder
1 c. raisins
1 tsp. baking soda
1 tsp. cinnamon
1 egg
2 tbsp. melted butter

Place carrots, potatoes and apples in a large bowl. Sift together nutmeg, sugar, flour, salt, baking powder, soda and cinnamon. Add egg, melted butter and raisins. Blend well. Pour into well-buttered 2-quart casserole and bake in 300 degree oven for about 2 hours. Garnish with pineapple and cherries, if desired. Serves 12.
