SHRIMP REMOULADE 
6 tsp. olive oil
1 tsp. paprika
4 green onions, chopped
4 tsp. "Mr. Mustard" or creole style mustard
2 tsp. vinegar
1/2 tsp. pepper
1/2 tsp. salt
2 ribs of celery, chopped fine
Chopped parsley to taste (optional)
1/4 head shredded lettuce
2 lb. cleaned, cold, boiled shrimp
2 hard-cooked eggs, chopped (keep yolk separate from white)

Combine all ingredients except lettuce, eggs and shrimp. Chill. Place shrimp on plate of shredded lettuce. Pour remoulade over shrimp and garnish with eggs.
