SHOOFLY PIE 
1/4 c. butter, softened and cut into bits
1 c. whole wheat pastry flour
1/3 c. finely packed brown sugar
1 tsp. cinnamon
1/4 tsp. each: ground ginger, ground cloves and salt

Also will need:

1/2 c. molasses
1/2 c. boiling water
1/2 tsp. baking soda
1 unbaked pastry crust

Preheat oven to 375 degrees.

In a mixing bowl combine the ingredients for the crumb mixture. Work the butter into the mixture with a pastry blender or fork until mixture resembles a coarse meal.

In another bowl, dissolve the molasses in the boiling water. Sprinkle in the baking soda and stir until dissolved. Add about 2/3 of the crumb mixture and stir together until the crumbs are moistened; the mixture need not be smooth. Pour into the prepared crust and top with remaining crumbs. Bake for 30-35 minutes or until filling is set. Serve warm or at room temperature.
