SHRIMP THERMIDOR 
1/2 c. evaporated skim milk
1 tsp. instant chicken bouillon
1/2 oz. fresh onion diced (more if you like)
4 oz. cooked shrimp
1/2 c. sliced mushrooms
Dash or two of garlic, to your taste
2 oz. Mozzarella cheese, grated
2 tsp. cornstarch
1/4 c. water
1 c. cooked enriched rice
1 tsp. sherry extract

Heat milk, bouillon and onion, add shrimp, mushrooms and garlic powder, gradually add cheese and cook over medium heat. Dissolve cornstarch in water and add to mixture and cook over low heat until thickened. Remove from heat, add sherry extract. Serve over rice divided evenly.
