TABOULI SALAD 
1 c. dry bulgar wheat
1 1/2 c. boiling water
1/2 tsp. salt
1/4 fresh lemon juice
3 tbsp. olive oil
Freshly ground black pepper to taste
1 1/2 tsp. fresh garlic, minced
3/4 tsp. dried mint, crushed
3/4 c. thinly sliced scallions (including green tops)
2 med. tomatoes, diced
3/4 c. fresh parsley, chopped
1 c. chopped cucumber

In a medium bowl, combine bulgar, boiling water and salt. Mix well and cover. Let stand for 20 minutes. Add lemon juice, olive oil, garlic, black pepper and mint. Mix well. Cover and refrigerate for 3 hours so that the flavors will blend.

Just before serving, add the scallions, tomatoes, cucumber and parsley. Mix well and adjust seasonings.
