TABOULI SALAD 
1/2 c. bulgur (cracked wheat)
2 c. finely chopped fresh parsley
1 c. finely chopped spring onions
1/2 c. finely chopped fresh mint
4 tomatoes, peeled, seeded and chopped
1-2 cloves garlic, crushed and finely chopped (optional)
1/3 c. olive oil
1/3 c. freshly squeezed lemon juice
Salt and pepper to taste

Place cracked wheat in a bowl and add 1 1/2 cups of cold water. Cover and allow to soak for 30 minutes; drain well. Mix in next 7 ingredients. Season to taste with salt and pepper. Cover and chill until serving time.
