BAKED RICE PUDDING 
4 eggs
1 tsp. vanilla
2 c. Minute Rice, cooked
3/4 c. sugar
Dash salt
Milk

Beat eggs, then add sugar, vanilla, salt and rice. Pour in square pan. Cover the batter with milk. (No certain amount of milk, just pour from carton until mixture is completely covered.)

Bake at 325 or 350 degrees for 1 hour, or until knife inserted in middle comes out clean. Then sprinkle with cinnamon.
