BAKED RICE PUDDING 
1 1/2 c. cooked rice
1/3 c. sugar
1/4 tsp. salt
1 1/2 c. milk
2 well beaten eggs
1/3 c. seedless raisins
1 tsp. vanilla
Dash of nutmeg

Combine sugar, salt and milk with eggs. Stir in rice, raisins and vanilla. Pour into 1 quart baking dish and sprinkle with nutmeg. Place in pan of warm water and bake at 350 degrees for approximately 50 minutes or until a knife inserted comes out clean. Serves 4.
