CREAMY BAKED RICE PUDDING 
1/2 c. sugar
1 tbsp. flour
1 tbsp. corn starch
1/4 tsp. salt (optional)
1/2 c. COLD milk
2 slightly beaten eggs
2 1/2 c. milk, scalded
1 1/2 c. cooked rice
1/2 c. raisins (optional)
1 1/2 tsp. vanilla

Mix sugar, flour, corn starch and salt. Stir in COLD milk and eggs. Add scalded milk. Cook in double boiler just until it starts to thicken. Add rice and vanilla.

Pour into 2 quart baking dish. Place in larger pan of boiling water. Bake at 325 degrees for 20 minutes.
