BAKED BEANS | |
2 lb. navy, pea or soldier beans 1 tsp. baking soda 1 peeled whole onion 1/2 to 1 lb. lean salt pork 2 tsp. dry mustard 1/2 to 2/3 c. dark molasses 1/2 tsp. salt Soak overnight the beans. Parboil until beans begin to foam with baking soda. Place onion in bottom of pot. Add beans and cover with hot water. Stir in the salt pork, dry mustard, molasses and salt. Mix and bake for 6 hours, stirring occasionally. |
