CHICKEN OR TURKEY SOUP 
turkey or chicken
onion
escarole, chopped
carrots, chopped
celery, chopped
SoupMac, orzo, etc., cooked
1/2 pkg. frozen tortellini, cooked
chicken bouillon to taste
salt and pepper to taste
1 tbsp. poultry seasoning
8 small meatballs, cut into small pieces

Cover turkey or chicken with water. Add whole onion and slowly boil until meat is tender. Remove meat and drain juice through a strainer to remove any bones. Return juice to pan with onion.

Add escarole, carrots, celery, bouillon, salt, pepper and poultry seasoning. Boil, covered, until tender. When done, add the chicken or turkey that has been cut into bite size pieces, then add sliced meatballs, macaroni (SoupMac, orzo, etc.) and tortellini.

This tastes best if made the day before.
