CHICKEN CASSEROLE 
Into 9 x 13 inch baking pan, pour 1 cup of uncooked rice, spreading it to cover bottom of pan. Place chicken pieces on the rice so most of rice is covered. Mix together: 1 1/2 cans of water

Pour over chicken-rice. Dot the chicken with small pieces of butter. Season with pepper to taste. (Soup makes it salty enough.) Bake uncovered in 400 degree oven for 1 hour. A spinach casserole can be baked at the same time.

SPINACH CASSEROLE:

3 pkgs. frozen spinach, mixed with
1 stick butter
4 egg yolks

Then fold with 4 stiffly beaten whites of the eggs. Bake about 30 minutes in the 400 degree oven with the chicken.
