CHICKEN CHILI CASSEROLE 
4 oz. tortilla chips, crushed
1 lb. boneless chicken breast, cut in 1 inch cubes
1 sm. onion, diced
1 clove garlic, minced
2 tbsp. oil
1 (15 oz.) can tomato sauce
1 (17 oz.) can whole kernel corn, drained
1 (15 oz.) can red kidney beans
1/2 c. each, ripe and green olives
3 tbsp. chili powder
1/4 tsp. crushed red pepper
1 tsp. black pepper
1 tbsp. each basil and parsley
1 c. each Monterey Jack and cheddar cheese

Line bottom of 13 x 9 x 2 inch baking dish with chips, set aside. In a large dutch oven over medium heat saute chicken, onion, garlic in oil until chicken is opaque. Stir in remaining ingredients except cheeses. Top with cheeses. Bake in preheated 350 degree oven 30 minutes or until heated through and cheese melts. Serves 6. 508 calories per serving.
