GINGER-PEAR PRESERVES 
4 c. pears, peeled & coarsely chopped
2 1/2 c. honey
1/4 tsp. salt
1 lemon, finely diced
Ginger root

Combine all ingredients except ginger root. Cook for about 15 minutes, stirring occasionally, until the mixture is of spreading consistency. Spoon hot into hot sterilized jars to within 1/2 inch from top. Add a small piece of ginger to each jar. Seal and process in a boiling-water bath for 5 minutes. Yield: 5 half-pints.
