SOUR MILK MUFFINS 
2 c. flour
2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt (may omit)
1 egg (or 1/4 c. egg beaters)
1 c. sour milk (do not use buttermilk)
2 tbsp. oil

Sour skim milk by using 1 1/3 to 1 1/2 teaspoons vinegar or lemon juice in cup and filling with milk. Let stand a few minutes before using.

Blend moist ingredients with dry. Stir just until mixed. Bake at 400 degrees for 15 to 20 minutes.
