APPLE-RAISIN BREAKFAST BARS 
1/4 c. butter
1/2 c. packed dark brown sugar
1 egg
1 tsp. vanilla
1/2 c. flour
1 tsp. cinnamon
1/4 tsp. baking powder
1 c. quick oats, uncooked
1 cooking apples, diced (about 1 c.)
1/2 c. raisins

Place butter in a 2-quart glass measure. Microwave on high 45 seconds, or until melted. Stir in sugar; blend in egg and vanilla. Add flour, cinnamon and baking powder; blend. Stir in oats, then apple and raisins.

Pour mixture into a lightly greased 8x8 inch glass dish; level with rubber scraper. Rotating midway through cooking, microwave on high 5 minutes, or until top is set but slightly moist. Let stand 5 minutes before cutting. May be eaten warm or at room temperature.

Makes 8 bars.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Tastes great! However I would recommend using an oven instead of a microwave which can leave the bars unevenly cooked.

Quick and simple to make. A cakey type of bar. I used 1 cup chopped canned pineapple instead of apple, reduced the raisins to scant 1/4 cup and added 1/4 cup of walnuts. Baked at 350°F for 25 minutes. Husband loved it. Might sub maraschino cherries for the raisins/walnuts next time.
