CINNAMON APPLE-RAISIN MUFFINS 
1 3/4 c. flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/4 tsp. salt
1 beaten egg
3/4 c. milk
1/2 c. cooking oil
1/2 tsp. cinnamon
1 c. chopped, peeled apples
1/3 c. raisins

Stir together flour, sugar, baking powder, salt and cinnamon. Make a well in the center. Combine eggs, milk and oil. Stir until moistened. Fold in apples and raisins. Fill muffin cups 2/3 way full. Bake in a muffin pan at 400 degrees for 20 to 25 minutes.
