BROCCOLI-RICE CASSEROLE 
2 tbsp. minced onion
1/4 c. butter
1 pkg. frozen chopped broccoli
1/2 lb. Velveeta cheese
1 cream of celery soup
1/2 c. raw rice (cook without salt before adding to casserole)

Saute onion in butter. Add broccoli and cook until thawed. Add Velveeta cheese and cook until it melts. Add soup and rice. Mix thoroughly. Cook in a 325 degree oven for 25 minutes.
