3 lb. lean ground beef
1 sm. onion, minced
2 eggs
1 c. bread crumbs
1 c. tomato juice
Parsley flakes
1 tsp. Worcestershire sauce
Salt & pepper to taste
1 tsp. garlic powder

Combine all ingredients well. Shape into oval. Bake at 350 degrees for 1 hour. While meat loaf is baking, make a dish of mashed potatoes. When meat loaf is done, spread with mashed potatoes as if icing a cake. Put dash of butter, salt and pepper on top and return to oven until lightly browned, about 10 minutes. Slice to serve. The potatoes will frame the meat to make a pretty picture.
