ZUCCHINI BREAD 
3 eggs
2 c. sugar
1/4 tsp. baking powder
3 c. sifted flour
1 tsp. salt
1 1/2 tsp. cinnamon
3 tsp. vanilla
1 c. oil
2 c. peeled, seeded & grated zucchini
1 tsp. baking soda
1/2 c. chopped nuts

Beat eggs until fluffy. Add oil, sugar and zucchini with whatever juice it makes. Add other ingredients. Mix and pour into greased loaf pan or muffin tins. Bake at 350 degrees for 1 hour for loaf pan, 25-30 minutes for muffins.
