ZUCCHINI BREAD 
2 eggs
1 c. oil
1 1/2 c. sugar
2 tsp. vanilla
3/4 c. honey
2 c. grated squash
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tbsp. cinnamon
1 1/2 c. chopped nuts

Beat eggs; add oil, sugar, vanilla, zucchini, and honey. Mix well. Sift all dry ingredients together. Add gradually to zucchini mixture. Fold in nuts. Bread can be baked in small loaves. Bake at 325 degrees until brown. Makes 6 small loaves.

GLAZE:

1 c. powdered sugar
2-3 tbsp. milk or water

Pour glaze over bread while warm.
