SWEET 'N SOUR PORK 
2 tbsp. cornstarch
1/2 c. chicken broth
2 tbsp. soy sauce
2 tbsp. butter
1 c. chicken broth
3/4 c. green pepper, sliced
6 slices diced pineapple
3/4 c. pineapple juice
1/2 c. vinegar
1/2 c. sugar
1/2 tsp. salt
1/4 tsp. ginger
2 tbsp. oil
2-3 lb. pork (in strips)

Mix paste ingredients and set aside. Melt the butter in skillet add the 1 cup chicken broth, green pepper, and pineapple slices. Cover and simmer 5 minutes. Add vinegar, pineapple juice, sugar, salt, ginger, and paste (made from first 3 ingredients). Simmer, stirring constantly until mixture thickens slightly. Saute pork strips in oil. Add the sweet 'n sour sauce cover, simmer 10 minutes. Serve over rice.
