GARDEN VERMICELLI 
1 pkg. (10 oz.) frozen broccoli, chopped, thawed & well drained
1/2 lb. carrots OR zucchini, sliced, cooked & drained
1 can (4 oz.) mushrooms, drained
1/4 c. onion, chopped
1 clove garlic, minced
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/2 tsp. thyme OR oregano
2 c. milk
6 slices American cheese
1 pkg. (7 oz.) vermicelli

Prepare vermicelli as directed on package.

In large saucepan, cook onion and garlic in butter until tender. Stir in flour, salt and thyme. Gradually stir in milk. Cook and stir over medium heat until mixture thickens. Stir in cheese. Cook and stir until melted. Add broccoli, carrots and mushrooms. Heat through. Toss with vermicelli. Serves 6.
