CAULIFLOWER--GREEN PEPPER AND
BEEF
 
3 tbsp. soy sauce
1 1/2 tsp. salt
2 tsp. sugar
3/4 c. sliced lean beef
1 tsp. fresh or dried ginger
3 tbsp. peanut oil
3 3/4 c. sliced cauliflower
1/4 c. sliced green pepper
1/2 tsp. cornstarch
1/8 c. sliced green onions with tops

Combine 1 tablespoon soy sauce, 1/2 teaspoon salt and 1 teaspoon sugar; add to beef. Let stand for 5 minutes. Soak ginger in 1 tablespoon water. Make sauce of remaining salt, sugar and soy sauce; add ginger juice.

Heat 1/2 of the oil until very hot; add beef. Cook for 1 minute. Stir; remove beef from pan. Add remaining oil; heat. Add cauliflower and green pepper; stir and cook for 2 minutes. Add 1 cup water.

Make a smooth paste of cornstarch and small amount of water; combine with ginger and soy sauce mixture. Stir into vegetables when vegetables begin to boil. Add onions; boil for 30 seconds, stirring constantly. Add beef; reheat. Serve very hot with steamed rice.
