JESSICA'S CAULIFLOWER AND
SPAGHETTI

So simple and delicious!

1 full head of cauliflower
1 clove garlic
1 (16 oz.) pkg. spaghetti
virgin olive oil
3 tbsp. butter
1/2 cup water
bread crumbs
Romano cheese
salt and pepper

Wash/rinse cauliflower and cut into pieces. Boil until tender. Do not get rid of water.

In saucepan add sparingly olive oil and let heat, crush and cut garlic and brown. Slowly add cauliflower and mash. Add about 2-3 tablespoons of butter and 1/2 cup of water and let cook for about 1 hour (covered of course). You will use the remaining cauliflower water to boil your spaghetti.

Meanwhile brown your bread crumbs. Once spaghetti is done then drain. Add your cauliflower to your spaghetti and use (to your liking) olive oil so the the ingredients stick.

Once completed you can use breadcrumbs, Romano (or your liking of cheese), salt and pepper to taste.

As a side dish you can use broiled chicken wings, Italian sausage or even pork chops. Great the next day, just heat in the microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
