HONEY AND LEMON HERB PORK GLAZE
ROAST
 
1/2 cup honey
1 tbsp. lemon juice
how ever many pork chops you want
herbs (any kind will do)
lettuce
red onion
baby tomatoes
Feta cheese
red wine vinegar
olive oil
salt
black pepper

Glaze:

In a bowl, combine honey and lemon juice, a pinch of salt, and black pepper. Grate some of the lemon zest into the mixture and add the herbs of your choice. Cover the glaze with cling wrap.

Pork:

Preheat oven to 300°F-350°F.

Pour a tablespoon of olive oil onto a baking tray. Generously brush the pork with the honey and lemon glaze. Roast in the oven for 30 minutes to 45 minutes.

Salad:

Pour olive oil into a hot pan. Slice the red onion into rings. Put onion in the pan and gradually pour in 1/2 a cup of red wine vinegar. When done cooking, toss the onion rings with the salad. For the dressing, you can use the honey and lemon glaze or some of the red wine vinegar left in the pan.

When the pork is done, arrange the meat over the salad and serve.
