APRICOT ORANGE GLAZED PORK ROAST 
2-3 lb. pork loin (boneless is better)
salt or salt substitute (to taste)
black pepper (to taste)
1/2 jar Smucker's Apricot preserves
1/2 jar Smucker's Orange Marmalade preserves
1 orange, cut in slices or well drained mandarin orange sections (for garnish)

Rub pork loin with salt and pepper. Bake covered with aluminum foil in oven at 350°F for 1 1/2 to 2 hours (until nearly cooked ~ 150°F) in loaf type or casserole type pan, depending on size of pork loin and whether it it boneless or not.

Use at least a 1/2 jar of each of the apricot preserves and orange marmalade, stir until well mixed in small bowl. Spoon preserve mixture over roast, bake for an additional 10 to 15 minutes (let internal temperature reach 165°F).

Let stand for about 15 to 20 minutes, then slice with sharp knife. Use any remaining preserve mixture as dipping sauce or drizzle over slices of roast. Garnish with orange slices or mandarin orange sections.

Note: May substitute Smucker's Brand preserves and marmalade with any other brand.
