QUICHE LORRAINE 
1 tsp. salt
1 tsp. sugar
1 dash nutmeg
4 oz. shredded Swiss cheese
6 eggs
1 tsp. white pepper
1 dash Tabasco
5 oz. chopped bacon, cooked
3 oz. diced onion
2 (9-inch) pie shells

Heat oven to 400 degrees. Place cooked bacon, onion, and Swiss cheese in pie shell. Beat eggs until foamy and add remaining ingredients.

Pour egg mixture into pie shells. Sprinkle nutmeg on top and bake 10 minutes at 400 degrees. Reduce to 325 degrees and cook 30 minutes more. Cool 5-10 minutes and serve.

Can be made ahead of time and heated in Microwave. Yield 2 pies.

Since microwave ovens vary in power, you may need to adjust your cooking time.
