MEXICAN CHICKEN (Rhonda) 
1 (6 oz.) canned chicken, drained
1 big bag Doritos
1 stick celery, diced
1 can Rotel, diced
1 can cream of chicken soup
1 can cream of mushroom soup
1/4 chopped onion
1/4 tsp. butter
1 pkg. grated cheddar cheese

Mix chicken, Rotel, cream of mushroom and cream of chicken soup in large mixing bowl. Saute celery and onion in butter until butter is almost absorbed, then mix with other ingredients. Line bottom and sides of casserole dish with Doritos and pour mixture over top. Spread grated cheese over mixture. Bake at 350 degrees for 5-10 minutes or until middle is hot and cheese melted.
