MEXICAN CHICKEN CASSEROLE 
2 to 3 chicken breasts, cooked and chopped
1 can cream of mushroom soup, undiluted
1 can cream of chicken soup, undiluted
1/2 c. green pepper, chopped
1 can Rotel tomatoes (or use taco salsa sauce)
2 tbsp. chopped onion
1 bag Doritos
1 c. chicken stock
1 c. Cheddar cheese, grated
1 tbsp. chili powder

Break up Doritos in casserole. Layer chicken over them. Pour chicken stock over it. Layer onion and bell pepper. Next, add half the cheese and sprinkle with chili powder.

Combine 2 soups and pour over all. Next, add the tomatoes and bake at 350 degrees for about 45 minutes or microwave at high power for about 20 minutes. Add remaining cheese last 5-10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
