RHUBARB COBBLER 
1 c. sugar
1/3 c. pancake mix
1 tsp. grated lemon peel
4 c. or 1 1/2 lbs. fresh rhubarb, cut in 1/2 inch pieces

Combine and pour into 9 inch square baking pan. Spread Topping over top.

TOPPING:

3/4 c. pancake mix
2/3 c. sugar
1 egg, beaten

Combine with fork, resembles coarse crumbs. Drizzle 1/4 cup melted butter over all. Bake at 375 degrees for 35 to 40 minutes. Serve with cream or ice cream.
