SWEDISH COCONUT COOKIES 
1 c. shortening
1 c. butter
2 c. sugar
1 tsp. baking soda
1 tsp. baking powder
3 c. flour
1 c. coconut
1 tsp. vanilla

Cream shortening, butter, and sugar. Add sifted dry ingredients, then coconut and vanilla. Put on cookie sheet with scoop or roll in balls the size of walnuts.

Flatten with bottom of glass (greased first time only) and dipped in sugar. Bake at 350 degrees until lightly tanned - NOT brown. This is a very light, delicate cookie.
