EGG SALAD 
24 hard-boiled eggs, chopped
3 tsp salt
4 1/2 to 6 tsp red wine vinegar
Pepper to taste
3 ribs celery, finely chopped
24 pitted green or ripe olives, finely chopped
1/2 tsp Creole mustard
1/2 to 2/3 cup mayonnaise

Mix all ingredients thoroughly, adding mayonnaise to desired consistency. Refrigerate.
