CLAM PIE 
2 (10 oz.) cans Progresso Clams
4 tsp. lemon juice
1 lg. diced onion
1/2 lb. melted butter
1 1/2 c. bread crumbs
2 tbsp. oregano
1/2 tsp. hot pepper sauce (Durkee)
1/2 tsp. pepper
3 cloves minced garlic
Dash of salt (optional)
Parmesan cheese to taste

Drain clams; preserve juice. Simmer in lemon juice 15 minutes on low heat. Add onion, garlic and clam juice. Add melted butter and oregano. Add hot pepper sauce and bread crumbs and salt to taste, if needed. Mix until blended well. Transfer to a 9 inch round pie pan and sprinkle top with Parmesan cheese then bake in 400 degree oven for 20-30 minutes. Serve with crackers.
