APPLE MUFFINS 
1 1/2 c. packed brown sugar
1 egg
1 tsp. baking soda
1 tsp. vanilla
1 1/2 c. diced apples, unpeeled
1/2 c. sugar
2/3 c. vegetable oil
1 c. buttermilk
1 tsp. salt
2 1/2 c. flour
1/2 c. nuts
1 tbsp. melted butter

Combine brown sugar, oil and egg. Mix thoroughly with electric beater. In another bowl, mix the milk, soda, salt and vanilla. Add milk mixture to sugar mixture alternating with flour. Mix well after each addition. Fold in apples and nuts. Put in muffin tins using papers. Mix up sugar and melted butter. Spoon on top of each muffin. Bake 30 minutes at 325 degrees. Yield: 24 muffins. Can be frozen.
