MEXICAN MEATBALLS | |
1 lb. ground beef 1 egg 1 quarter oz. pkg. taco seasoning mix 1 c. quick cooking rice 1/2 tsp. onion powder 1 (16 oz.) can garlic flavored tomato sauce In a bowl, combine beef, egg, taco seasoning mix, onion powder, rice, and 1/4 of tomato sauce. Shape into 20 meatballs, each about two tablespoons. Place meatballs in a 12 x 8 inch microwave safe dish. Cook on high for 10-12 minutes. You may want to cover them with wax paper. Cook until no longer pink inside, stirring gently 1/2 way through. Drain off fat and pour remaining tomato sauce over meatballs. Heat 2-3 minutes until sauce is hot. Let stand 3 minutes. 4 servings. Good with grated Cheddar cheese sprinkled on top. |
