ZUCCHINI CASSEROLE 
2 lbs. fresh zucchini, peeled
Salt
1 med. onion
1 sm. pepper, chopped
1/2 c. sugar
1/2 c. heavy cream
Ritz crackers, ground

Preheat oven to 350 degrees. Cut zucchini into 1/2" chunks and boil 3 to 4 minutes in salt water; drain and put in flat oven dish. Add onion, pepper and sugar. Drain off moisture. Add cream so veggies aren't quite covered. Sprinkle ground crackers thinly over top. Bake about 30 minutes. Yield: 8 to 10 servings.
