ZUCCHINI CASSEROLE 
3 c. cooked zucchini
1 lb. hamburger or sausage
1/2 c. chopped onion
1/2 c. chopped green pepper
Salt and pepper
1 can Cheddar cheese soup
1/4 c. milk
Ritz cracker crumbs

Cube zucchini, cook and drain. Brown meat. Add onion, pepper, salt and pepper. Add soup and milk, cook to blend. Layer 1/2 zucchini, 1/2 meat in 2-quart casserole. Cover with crumbs. Bake uncovered 45 minutes at 350 degrees.
